  • ¾ cup granulated sugar
  • 1 large egg, at room temperature vegan alternative (e.g., flax egg)
  • 1 teaspoon vanilla extract

  • 1 cup semi-sweet chocolate chips vegan

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt until well combined; set this dry mixture aside.
  • In a large mixing bowl, use an electric mixer to cream together the softened butter and sugar on medium speed until the mixture is light and fluffy, about 2-3 minutes.
  • Beat the egg and vanilla extract into the butter mixture until fully incorporated, then mix in the peanut butter until the batter is smooth.
  • Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until just combined, then use a spatula to fold in the chocolate chips.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
  • Bake for 10-12 minutes, or until the edges are lightly golden and the centers look just set.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely, which will allow them to firm up.
