Make this easy vegan berry parfait with dairy-free yogurt, fresh berries, crunchy granola, and toasted almonds. Perfect healthy breakfast or dessert ready in 15 minutes!
In a small bowl, gently mix the raspberries, blueberries, maple syrup, and lemon zest until the berries are lightly coated and glistening.
Toast the sliced almonds in a dry skillet over medium heat for 3-4 minutes, stirring frequently, until they become fragrant and turn a light golden brown.
Spoon 1/4 cup of dairy-free vanilla yogurt into the bottom of each parfait glass, spreading it into an even layer.
Top the yogurt layer with 2 tablespoons of the berry mixture, allowing some of the berry juices to drip down the sides.
Sprinkle 2 tablespoons of granola over the berries to create a crunchy, even layer.
Repeat the layering process with another 1/4 cup yogurt, 2 tablespoons berries, and 2 tablespoons granola in each glass.
