Ingredients
  

Berry Mixture

  • 1 cup fresh raspberries
  • 1 cup fresh blueberries
  • 2 tbsp maple syrup
  • 1 tsp lemon zest

Layers

  • 2 cups dairy-free vanilla yogurt
  • 1 cup granola
  • 1/4 cup toasted sliced almonds

Instructions
 

  • In a small bowl, gently mix the raspberries, blueberries, maple syrup, and lemon zest until the berries are lightly coated and glistening.
  • Toast the sliced almonds in a dry skillet over medium heat for 3-4 minutes, stirring frequently, until they become fragrant and turn a light golden brown.
  • Spoon 1/4 cup of dairy-free vanilla yogurt into the bottom of each parfait glass, spreading it into an even layer.
  • Top the yogurt layer with 2 tablespoons of the berry mixture, allowing some of the berry juices to drip down the sides.
  • Sprinkle 2 tablespoons of granola over the berries to create a crunchy, even layer.
  • Repeat the layering process with another 1/4 cup yogurt, 2 tablespoons berries, and 2 tablespoons granola in each glass.
  • Finish each parfait with a final dollop of yogurt, a spoonful of any remaining berries, and a generous sprinkle of toasted almonds.
  • Chill the parfaits in the refrigerator for at least 15 minutes before serving to allow the flavors to meld and the granola to soften slightly.

Notes

Use gluten-free granola if needed. For sweeter parfaits, add extra maple syrup.
