Ingredients
  

Cookie Base

  • 40 Oreo cookies
  • 8 oz cream cheese softened to room temperature

Coating and Decoration

  • 24 oz pink candy melts
  • 12 oz white chocolate chips
  • 2 tbsp shortening divided
  • 0.25 cup red candy melts or chocolate melting wafers
  • 3 tbsp sprinkles and/or edible glitter
  • 16 lollipop sticks

Instructions
 

  • Place the 40 Oreo cookies in a large food processor. Process them on high until the cookies form fine, uniform crumbs with no large pieces remaining.
  • Add the 8 ounces of softened cream cheese to the food processor with the crumbs. Process until the mixture is completely combined and forms a thick, uniform dough that holds together when pressed.
  • Roll the dough into tablespoon-sized balls, about 1-inch in diameter. Place the balls on a baking sheet lined with parchment paper. Gently insert a lollipop stick halfway into the center of each ball. Chill the balls in the refrigerator for at least 30 minutes, or until they are very firm.
  • Place the 24 ounces of pink candy melts in a microwave-safe bowl with 1 tablespoon of shortening. Melt in 30-second intervals, stirring thoroughly after each, until the coating is completely smooth and fluid.
  • Hold a chilled Oreo pop by its stick and dip it into the melted pink coating. Lift and gently swirl to let any excess coating drip back into the bowl. Immediately decorate with sprinkles or edible glitter before the coating sets. Place the dipped pop back on the parchment-lined sheet.
  • Once all pops are dipped and decorated, melt the 12 ounces of white chocolate chips with the remaining 1 tablespoon of shortening in a separate bowl using the same microwave method. Transfer the melted white chocolate to a small piping bag or a zip-top bag with a tiny corner snipped off.
  • Drizzle the melted white chocolate in zig-zag lines over the set pink coating of each pop for decoration. For an extra touch, melt the 1/4 cup of red candy melts and drizzle them over the pops as well.
  • Allow all the coatings to set completely at room temperature, which will take about 30 minutes. The exterior should be firm and dry to the touch before serving or wrapping.

Notes

Ensure cream cheese is softened to room temperature for easy mixing. Chill pops thoroughly before dipping for best results.
