Ingredients
  

Cookie Dough

  • 1 cup unsalted butter softened to room temperature
  • 3/4 cup granulated sugar
  • 1 large egg at room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp strawberry gelatin powder such as Jell-O
  • 1 1/2 cups white chocolate chips
  • 1/2 cup granulated sugar for rolling

Instructions
 

  • Preheat your oven to 375 degrees Fahrenheit and line two baking sheets with parchment paper. In a large mixing bowl, use an electric mixer on medium speed to cream together the softened butter and 3/4 cup of granulated sugar until the mixture is light and fluffy, about 2-3 minutes.
  • Beat in the room temperature egg, vanilla extract, and almond extract until the mixture is fully combined and smooth.
  • In a separate medium bowl, whisk together the all-purpose flour, baking powder, salt, and strawberry gelatin powder. Gradually add this dry mixture to the butter mixture, mixing on low speed just until a soft, cohesive dough forms and no dry streaks remain. Use a spatula to fold in the white chocolate chips until they are evenly distributed.
  • Place the 1/2 cup of additional granulated sugar in a small bowl. Scoop dough by the heaping tablespoon and roll into 1-inch balls. Roll each ball in the sugar to coat it completely, then place the balls about 2 inches apart on the prepared baking sheets.
  • Bake the cookies for 9 to 11 minutes, or until the edges are just set and the bottoms are lightly golden. The centers will look soft and puffy; they will settle and develop a slight crackle as they cool. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
