Ingredients
  

Pastry Base

  • 1 package frozen puff pastry sheets 17.3 ounces, thawed according to package directions
  • 1 large egg lightly beaten
  • 1 tbsp water

Cream Cheese Filling

  • 8 oz cream cheese softened to room temperature
  • 1/4 cup granulated sugar
  • 1 tsp pure vanilla extract

Strawberry Topping

  • 1 cup fresh strawberries hulled and finely chopped
  • 2 tbsp granulated sugar
  • 1 tsp cornstarch
  • Powdered sugar for dusting, optional

Instructions
 

  • Preheat your oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper.
  • In a medium bowl, beat the softened cream cheese, 1/4 cup granulated sugar, and vanilla extract with a hand mixer or whisk until smooth and creamy. Set aside.
  • In a small bowl, toss the finely chopped strawberries with 2 tablespoons granulated sugar and cornstarch until evenly coated. Let the mixture sit for 5 minutes to allow the strawberries to release their juices.
  • On a lightly floured surface, roll out one thawed puff pastry sheet to a 10-inch square. Use a sharp knife or pizza cutter to cut it into 4 equal squares. Repeat with the second sheet if needed, then place all squares on the prepared baking sheet, spacing them about 2 inches apart.
  • Spoon about 2 tablespoons of the cream cheese mixture onto the center of each pastry square, leaving a 1/2-inch border. Top with a heaping tablespoon of the strawberry mixture.
  • In a small bowl, whisk together the beaten egg and water to create an egg wash. Use a pastry brush to lightly coat the exposed edges of each pastry square with the egg wash.
  • Bake in the preheated oven for 15 to 18 minutes, or until the pastries are puffed, golden brown, and the edges are crisp.
  • Remove the baking sheet from the oven and let the danishes cool on the sheet for 10 minutes before transferring to a wire rack. Dust with powdered sugar if desired before serving.
