Ingredients
  

Cookie Dough

  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg at room temperature
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp kosher salt
  • 1 1/2 cups rolled oats old-fashioned, not quick-cooking
  • 1 cup semisweet chocolate chips
  • 1/2 cup chopped walnuts

Instructions
 

  • Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper and set them aside.
  • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together with an electric mixer on medium speed for about 2 minutes, until the mixture is light, fluffy, and well combined.
  • Beat in the egg until fully incorporated, then scrape down the sides of the bowl with a rubber spatula. In a separate medium bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add this dry mixture to the butter mixture, mixing on low speed just until no streaks of flour remain.
  • Use a sturdy wooden spoon or spatula to fold in the rolled oats, chocolate chips, and chopped walnuts. Mix until all ingredients are evenly distributed throughout the thick dough.
  • Drop heaping tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading. Bake for 10-12 minutes, until the edges are golden brown and the centers look just set.
  • Let the cookies cool on the baking sheets for 5 minutes to firm up, then transfer them to a wire rack to cool completely.

Notes

The cookies will be soft and chewy. Let them cool on the baking sheet for 5 minutes to firm up before transferring.
