Ingredients
  

  • 4 medium sweet potatoes about 2 pounds total, scrubbed clean and dried
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika

Instructions
 

  • Preheat your oven to 425°F (220°C) and line a large, rimmed baking sheet with parchment paper.
  • Cut the sweet potatoes into 1-inch cubes, aiming for pieces that are roughly the same size so they cook evenly.
  • In a large bowl, toss the sweet potato cubes with the olive oil, salt, black pepper, garlic powder, and smoked paprika until the cubes are evenly coated.
  • Spread the seasoned sweet potatoes in a single, uncrowded layer on the prepared baking sheet.
  • Roast for 20 minutes, then use a spatula to flip and stir the potatoes. Return them to the oven and roast for another 15-20 minutes, or until the potatoes are tender when pierced with a fork and the edges are caramelized and slightly crispy.
