Ingredients
  

  • 0.5 cup fresh raspberries or frozen thawed raspberries
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chia seeds
  • 2 cups cold water
  • 1 teaspoon maple syrup or honey optional, to taste

Instructions
 

  • In a medium bowl or a 16-ounce glass jar, add the raspberries. Using a fork or a muddler, gently mash the raspberries until they are mostly broken down and juicy. Small chunks of fruit are perfectly fine.
  • Add the fresh lemon juice, chia seeds, and cold water to the mashed raspberries. If using, incorporate the maple syrup or honey now for initial flavoring.
  • Stir the mixture vigorously with a spoon or whisk for about 30 seconds, ensuring the chia seeds are fully separated and not clumping together at the bottom of the container. This thorough initial stir is crucial for proper hydration.
  • Let the mixture sit undisturbed for 5 minutes. After this brief rest, stir it thoroughly once more to break up any potential clumps that may have formed as the chia seeds begin to absorb liquid.
  • Cover the container and refrigerate for at least 30 minutes, or ideally up to 2 hours, allowing the chia seeds to fully hydrate and the water to thicken to a jelly-like consistency.
  • Before serving, give the chia water a final stir. Taste and adjust sweetness if desired, adding more maple syrup or honey, or a squeeze of fresh lemon juice for more tang. Serve chilled.
