Ingredients
  

Cookie Dough

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 cup unsalted butter at room temperature and softened
  • 1 large egg yolk
  • 1 tsp pure vanilla extract
  • 1/2 tsp salt

Filling and Decoration

  • 1 cup raspberry chia jam
  • powdered sugar for dusting

Instructions
 

  • In a large mixing bowl, use an electric mixer to beat the softened unsalted butter and granulated sugar together on medium-high speed until the mixture is light and fluffy, about 3 minutes.
  • Beat in the egg yolk and pure vanilla extract until fully combined. Add the all-purpose flour and salt, and mix on low speed just until a soft, cohesive dough forms and no dry streaks remain.
  • Shape the dough into a flat disc, wrap it tightly in plastic wrap, and refrigerate for at least 1 hour until it is firm enough to roll out without sticking.
  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper. On a lightly floured surface, roll half of the chilled dough to a 1/8-inch thickness. Use a 2 1/2-inch heart-shaped cookie cutter to cut out shapes, re-rolling the scraps as needed. Place the solid hearts 1 inch apart on the prepared baking sheets.
  • Roll out the remaining dough and cut out an equal number of hearts. Using a smaller heart-shaped cutter or a knife, cut a smaller heart window from the center of each of these cookies to create the tops.
  • Bake the cookies for 10 to 12 minutes, or until the edges are just beginning to turn golden. Let them cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  • Spread about 1 teaspoon of raspberry chia jam onto the flat side of each solid heart cookie, leaving a narrow border around the edge. Place a cut-out top cookie on top of each one to make a sandwich.
  • Gently dust the assembled cookies with powdered sugar using a fine-mesh sieve just before serving.

Notes

Ensure butter is properly softened for easier mixing. Use a sharp cookie cutter for clean edges. Dust with powdered sugar just before serving for best presentation.
