Ingredients
  

Oat Base

  • 1 1/2 cups old-fashioned rolled oats
  • 1/4 cup chopped pecans
  • 1/4 cup light brown sugar packed
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp kosher salt
  • 2 cups milk of your choice
  • 1 tsp vanilla extract
  • 1 1/2 cups finely chopped peaches fresh or frozen and thawed

Topping

  • 1/4 cup plain Greek yogurt

Instructions
 

  • In a medium-sized mixing bowl, combine the old-fashioned rolled oats, chopped pecans, packed light brown sugar, ground cinnamon, ground nutmeg, and kosher salt. Stir with a spoon or whisk until the ingredients are evenly distributed.
  • Pour in the milk and vanilla extract, and stir everything together until the mixture is well-combined and no dry pockets of oats remain.
  • Gently fold in the finely chopped peaches until they are evenly distributed throughout the oat mixture.
  • Spoon the oat mixture evenly into two 16-ounce mason jars or other airtight containers with lids.
  • Place the lids on the containers and refrigerate for at least 6 hours, or preferably overnight, to allow the oats to soften and the flavors to meld.
  • Just before serving, top each jar with 2 tablespoons of plain Greek yogurt and an extra sprinkle of chopped pecans or peaches, if desired.

Notes

For best results, let the oats chill overnight for maximum flavor melding and texture.
