Equipment

  • oven
  • baking sheet
  • mixing bowl
  • measuring spoons
  • knife
  • cutting board
  • meat thermometer

Ingredients

  • 2 pounds chicken drumsticks
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon onion powder

Instructions

  • Preheat your oven to 400°F (200°C) and line a large, rimmed baking sheet with aluminum foil for easy cleanup.
  • Pat the chicken drumsticks completely dry with paper towels; this will help the skin get crispy during baking.
  • In a large bowl, toss the dried drumsticks with the olive oil until they are evenly coated.
  • Sprinkle the salt, black pepper, garlic powder, smoked paprika, and onion powder over the drumsticks, then toss again to ensure each piece is thoroughly seasoned.
  • Arrange the drumsticks in a single layer on the prepared baking sheet, making sure they are not touching.
  • Bake for 35-45 minutes, flipping the drumsticks halfway through the cooking time, until the skin is golden brown and crispy and the internal temperature reaches 165°F (74°C) when measured with a meat thermometer.

Notes

Patting the chicken dry is crucial for crispy skin. Use a meat thermometer to ensure they are cooked through.
