Equipment

  • mixing bowl
  • knife
  • measuring spoons
  • electric mixer
  • loaf pan
  • oven
  • spatula
  • wire rack
  • measuring cups

Ingredients

  • 2 large eggs at room temperature
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup whole milk

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a standard 9x5-inch loaf pan, tapping out any excess flour.
  • In a large mixing bowl, use an electric mixer on medium speed to cream together the softened butter and granulated sugar until the mixture is light, fluffy, and pale yellow, about 3 minutes.
  • Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next, then mix in the vanilla extract until just combined.
  • In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt until evenly distributed.
  • Add the flour mixture to the butter mixture in three additions, alternating with the milk in two additions, beginning and ending with the flour. Mix on low speed after each addition until just combined; do not overmix. The batter should be thick and smooth.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  • Let the loaf cool in the pan on a wire rack for 15 minutes, then carefully run a knife around the edges and turn it out onto the rack to cool completely before slicing.
