Monster Cookie Dough

  • 1.5 cups creamy peanut butter
  • 1 cup light brown sugar
  • 2 large eggs at room temperature
  • 1 tsp vanilla extract
  • 2 cups old-fashioned oats
  • 1 tsp baking soda
  • 0.5 cup all-purpose flour
  • 1 cup semi-sweet chocolate chips
  • 0.5 cup M&M's candies

Brownie Base

  • 1 box fudge brownie mix 18.3 ounce
  • ingredients listed on brownie mix package typically eggs, oil, and water

Instructions
 

  • Preheat your oven to 350°F. Grease a 9x13-inch baking pan with nonstick spray and line it with parchment paper, leaving an overhang on two sides for easy removal.
  • Prepare brownie batter according to package directions using the required eggs, oil, and water. Pour the finished brownie batter evenly into your prepared pan and set aside.
  • In a large mixing bowl, beat together 1 1/2 cups creamy peanut butter and 1 cup light brown sugar with an electric mixer until smooth and creamy, about 2 minutes.
  • Beat in 2 large eggs one at a time, then mix in 1 teaspoon vanilla extract until fully incorporated. The mixture should be smooth and slightly thickened.
  • Using a wooden spoon, stir in 2 cups old-fashioned oats, 1 teaspoon baking soda, and 1/2 cup all-purpose flour until just combined. Fold in 1 cup chocolate chips and 1/2 cup M&M's candies.
  • Drop large spoonfuls of the monster cookie dough evenly over the brownie batter layer. Use a spatula to gently spread it into an even layer that mostly covers the brownie base.
  • Bake for 30-35 minutes, or until the edges are set and the top is golden brown. A toothpick inserted into the center should come out with moist crumbs, not wet batter.
  • Allow the pan to cool completely on a wire rack for at least 2 hours before using the parchment paper to lift out and slice into squares.
