Ingredients
  

Tofu

  • 14 oz firm tofu drained and pressed

Tofu Seasoning

  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Sauce

  • 0.5 cup sun-dried tomatoes in oil drained and chopped
  • 3 cloves garlic minced
  • 0.5 cup vegetable broth
  • 0.5 cup heavy cream
  • 0.25 cup grated Parmesan cheese
  • 2 tbsp fresh basil chopped

Pasta

  • 1 lb dried pasta such as rigatoni or fettuccine

Instructions
 

  • Place the pressed tofu block on a cutting board and cut it into 1-inch cubes. In a medium bowl, toss the tofu cubes with the olive oil, garlic powder, oregano, red pepper flakes, salt, and black pepper until evenly coated.
  • Heat a large, non-stick skillet over medium-high heat. Add the seasoned tofu and cook for 8-10 minutes, turning occasionally, until the cubes are golden brown and crispy on all sides. Remove the tofu from the skillet and set it aside on a plate.
  • Bring a large pot of salted water to a boil for the pasta. Cook the pasta according to package directions until al dente, then drain, reserving 1/2 cup of the pasta cooking water.
  • Using the same skillet, reduce the heat to medium. Add the sun-dried tomatoes and minced garlic, sautéing for 1 minute until the garlic is fragrant. Pour in the vegetable broth to deglaze the pan, scraping up any browned bits from the bottom with a wooden spoon.
  • Stir in the heavy cream and Parmesan cheese, simmering for 3-4 minutes until the sauce has slightly thickened and the cheese has melted. Add the cooked tofu and fresh basil to the sauce, stirring gently to combine.
  • Add the drained pasta to the skillet along with a splash of the reserved pasta water. Toss everything together until the pasta is evenly coated in the creamy sauce. Serve immediately.

Notes

Use firm or extra-firm tofu for best results. Pressing the tofu removes excess water for a crispier texture.
