Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp salt

Wet Ingredients

  • 1 cup unsalted butter softened at room temperature
  • 1/2 cup powdered sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp pure vanilla extract

Toppings

  • 1/4 cup colored sugar crystals
  • 1/4 cup heart-shaped sprinkles
  • 1/2 cup semi-sweet chocolate chips finely chopped

Instructions
 

  • In a medium bowl, whisk together the all-purpose flour and salt until fully combined. Set this flour mixture aside.
  • In a large mixing bowl using an electric hand mixer, beat the softened unsalted butter, powdered sugar, and granulated sugar together on medium speed until light and fluffy, about 3 minutes. Beat in the egg and pure vanilla extract until the mixture is smooth and uniform.
  • Reduce the mixer speed to low and gradually add the reserved flour mixture, mixing just until a soft cookie dough forms and no dry streaks of flour remain. Be careful not to overmix.
  • Cover the bowl with plastic wrap and chill the dough in the refrigerator until firm enough to handle easily, about 1 hour. Meanwhile, preheat your oven to 350°F and line two baking sheets with parchment paper.
  • Scoop dough by the level tablespoon, roll it into balls, and place them 2 inches apart on the prepared baking sheets. Use the bottom of a glass or your thumb to gently press an indentation into the center of each dough ball.
  • Bake the cookies in the preheated oven for 10 to 12 minutes, or until the edges are just set and very lightly golden. The centers will look soft. Immediately after removing the baking sheets from the oven, carefully press a small handful of chopped chocolate chips into the warm, soft center of each cookie to create a "locked" heart shape.
  • While the cookies are still warm on the baking sheet, sprinkle the colored sugar crystals and heart-shaped sprinkles around the chocolate-locked edges. Allow the cookies to cool completely on the baking sheets, about 30 minutes, so the chocolate sets and the cookies firm up.
