Ingredients
  

  • 1.5 pounds boneless, skinless chicken breasts
  • 0.25 cup all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 0.5 cup chicken broth
  • 0.25 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 2 tbsp unsalted butter at room temperature
  • 2 tbsp fresh parsley finely chopped

Instructions
 

  • Pat the chicken breasts dry with paper towels. In a shallow dish, combine the flour, salt, and black pepper. Dredge the chicken in the flour mixture, shaking off any excess.
  • Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes per side, or until golden brown and cooked through. Transfer the chicken to a plate and set aside.
  • In the same skillet, add the minced garlic and sauté for 1 minute, or until fragrant. Pour in the chicken broth and lemon juice, scraping the bottom of the pan to release any browned bits.
  • Stir in the lemon zest and butter, cooking for 2-3 minutes until the sauce thickens slightly. Return the chicken to the skillet, turning to coat it evenly in the sauce.
  • Remove the skillet from heat and sprinkle the chopped parsley over the chicken. Serve immediately with the lemon sauce spooned over the top.
