- 1.5 pounds boneless, skinless chicken breasts
- 0.25 cup all-purpose flour
- 1 tsp salt
- 0.5 tsp black pepper
- 2 tbsp olive oil
- 3 cloves garlic minced
- 0.5 cup chicken broth
- 0.25 cup fresh lemon juice
- 1 tbsp lemon zest
- 2 tbsp unsalted butter at room temperature
- 2 tbsp fresh parsley finely chopped
Pat the chicken breasts dry with paper towels. In a shallow dish, combine the flour, salt, and black pepper. Dredge the chicken in the flour mixture, shaking off any excess.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes per side, or until golden brown and cooked through. Transfer the chicken to a plate and set aside.
In the same skillet, add the minced garlic and sauté for 1 minute, or until fragrant. Pour in the chicken broth and lemon juice, scraping the bottom of the pan to release any browned bits.
Stir in the lemon zest and butter, cooking for 2-3 minutes until the sauce thickens slightly. Return the chicken to the skillet, turning to coat it evenly in the sauce.
Remove the skillet from heat and sprinkle the chopped parsley over the chicken. Serve immediately with the lemon sauce spooned over the top.
