Ingredients
  

  • 4 slices sourdough bread
  • 2 tablespoons unsalted butter softened
  • 4 ounces fresh mozzarella cheese sliced into 1/4-inch thick pieces
  • 2 ounces provolone cheese thinly sliced
  • 1/4 cup sun-dried tomatoes in oil drained and finely chopped
  • 1/4 cup basil leaves fresh, thinly sliced
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon Italian seasoning

Instructions
 

  • Preheat a large skillet or griddle over medium-low heat.
  • Spread 1 tablespoon of softened butter evenly on one side of each slice of sourdough bread.
  • Place two slices of bread, buttered side down, on the preheated skillet or griddle.
  • Layer the mozzarella cheese slices, provolone cheese, sun-dried tomatoes, basil, garlic powder, and Italian seasoning evenly over the bread in the skillet.
  • Top with the remaining two slices of bread, buttered side up.
  • Cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is fully melted, pressing down gently with a spatula halfway through cooking to help the sandwich hold together.
  • Remove the sandwiches from the skillet, let them cool for 1 minute, then cut in half diagonally and serve warm.
