Sandwich Ingredients
- 2 slices sourdough bread
- 1/3 cup classic hummus
- 1/4 large English cucumber thinly sliced
- 1/4 small red onion very thinly sliced
- 1/4 cup shredded carrots
- 2 tablespoons crumbled feta cheese
- 1 tablespoon fresh mint leaves chopped
- 1/2 teaspoon extra virgin olive oil
- 1/2 teaspoon lemon juice
- 1 pinch salt
- 1 pinch black pepper
In a small bowl, combine the thinly sliced red onion, lemon juice, and a pinch of salt. Gently toss and set aside for 5 minutes to lightly pickle and soften the sharp flavor of the onion.
While the onion pickles, toast the two slices of sourdough bread in a toaster until they are golden brown and crisp around the edges.
Spread the hummus evenly onto one side of each piece of toasted bread, using the full 1/3 cup divided between them.
Layer the thinly sliced cucumber and shredded carrots over the hummus on one slice of bread.
Drain any excess liquid from the pickled onions and scatter them evenly over the vegetables.
Sprinkle the crumbled feta cheese and chopped mint leaves over the other slice of bread, then drizzle with the 1/2 teaspoon of olive oil and a pinch of black pepper.
Carefully press the two prepared slices of bread together to form a sandwich, hummus-side in, pressing down gently so the ingredients adhere.
Slice the sandwich in half diagonally with a sharp serrated knife for easier serving.
