Ingredients
  

  • 1.5 pounds fresh carrots, peeled and trimmed
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves, chopped

Instructions
 

  • Preheat your oven to 400°F (200°C). This ensures the oven is hot enough to roast the carrots and give them a caramelized exterior.
  • In a large bowl, whisk together the 2 tablespoons of olive oil, 2 tablespoons of honey, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until the honey is fully incorporated into the oil.
  • Add the peeled and trimmed carrots to the bowl and toss them thoroughly until they are evenly coated with the honey and oil mixture.
  • Arrange the carrots in a single layer on a large, rimmed baking sheet, ensuring they are not crowded to allow for even roasting.
  • Roast the carrots in the preheated oven for 20 to 25 minutes, or until they are tender when pierced with a fork and the edges are caramelized and slightly browned.
  • Remove the baking sheet from the oven and immediately sprinkle the roasted carrots with the 1 tablespoon of chopped fresh thyme before serving.

Notes

Ensure carrots are in a single layer on the baking sheet for even roasting. Adjust honey to taste for desired sweetness.
