Ingredients
  

For the Chicken Marinade

  • 3 tablespoons fresh lime juice
  • 3 tablespoons extra-light olive oil
  • 2 tablespoons honey
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1.5 pounds boneless chicken pieces cut into 1-inch cubes

For the Rice Bowls

  • 2 cups white rice
  • 1 large red bell pepper thinly sliced
  • 1 large red onion thinly sliced
  • 2 tablespoons extra-light olive oil divided
  • salt and black pepper to taste

For Serving

  • 1 medium avocado sliced
  • 1/4 cup fresh cilantro leaves chopped
  • 1 lime cut into wedges

Instructions
 

  • In a large bowl, whisk together 3 tablespoons of fresh lime juice, 3 tablespoons of extra-light olive oil, honey, minced garlic, cumin, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper. Add the cubed boneless chicken pieces and toss until thoroughly coated. Let the chicken marinate at room temperature for 15 minutes.
  • While the chicken marinates, cook 2 cups of white rice according to its package directions. Fluff the finished rice with a fork and set it aside, keeping it covered to stay warm.
  • Heat a large skillet or grill pan over medium-high heat. Add half of the marinated chicken in a single layer, ensuring pieces are not touching. Cook for 5 to 7 minutes, turning occasionally, until the chicken is cooked through and has deep golden-brown marks. Transfer the cooked chicken to a clean plate. Repeat with the remaining chicken.
  • In the same skillet, add 1 tablespoon of extra-light olive oil. Add the thinly sliced red bell pepper and red onion. Season with a pinch of salt and pepper. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables are softened and slightly caramelized.
  • To assemble the bowls, divide the warm, fluffy rice among four serving bowls. Top each portion with the cooked honey-lime chicken and the sautéed peppers and onions. Garnish each bowl with sliced avocado, chopped fresh cilantro, and a lime wedge for squeezing over just before eating.

Notes

Let the chicken marinate at room temperature for the full 15 minutes for maximum flavor.
