Ingredients
  

  • 1 bag plain popped popcorn 10-12 cups
  • 12 ounces high-quality white chocolate baking bars
  • 1 tablespoon refined coconut oil
  • 1/2 teaspoon fine sea salt

Instructions
 

  • Preheat your oven to 250°F and line a large-rimmed baking sheet with parchment paper. Spread the plain popcorn evenly on the prepared baking sheet, picking out and discarding any unpopped kernels.
  • Coarsely chop the white chocolate baking bars and place them in a medium, microwave-safe bowl along with the coconut oil. Microwave on high power in 30-second intervals, stirring thoroughly after each interval, until the chocolate is completely melted and smooth.
  • Drizzle the melted white chocolate evenly over the popcorn on the baking sheet. Use a rubber spatula to gently toss and fold the popcorn until every piece is lightly coated in the chocolate.
  • Place the baking sheet in the preheated oven and bake for 15 minutes, then remove the tray and give the popcorn another gentle stir to ensure even coating.
  • Return the tray to the oven and bake for another 10-15 minutes, until the coating appears dry and set. Remove the tray from the oven and immediately sprinkle the warm popcorn with the fine sea salt.
  • Allow the popcorn to cool completely on the baking sheet at room temperature for at least 1 hour. As it cools, the chocolate coating will harden and the popcorn will become crisp.

Notes

Pick out and discard any unpopped kernels. Ensure the popcorn is completely cool before storing.
