Ingredients
  

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup heavy cream
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 cup shredded Gruyère cheese
  • 1/2 cup cooked crumbled bacon
  • 1/4 cup finely chopped roasted red peppers
  • butter for greasing muffin tin

Instructions
 

  • Preheat your oven to 300°F and generously grease a standard 12-cup muffin tin with butter, making sure to coat the bottom and sides of each cup.
  • Combine eggs, cottage cheese, heavy cream, salt, and pepper in a blender and blend on high speed for 30-45 seconds until the mixture becomes completely smooth and frothy.
  • Stir the shredded Gruyère cheese, crumbled bacon, and chopped roasted red peppers into the blended egg mixture until evenly distributed throughout.
  • Carefully pour the egg mixture into the prepared muffin cups, filling each about 3/4 full to allow room for rising during baking.
  • Place the muffin tin in the preheated oven and bake for 20-25 minutes until the egg bites are fully set around the edges and slightly puffed in the center.
  • Remove from oven and let cool in the tin for 5 minutes before gently running a knife around the edges to release each egg bite.

Notes

Let cool in the tin for 5 minutes before removing to ensure they hold their shape.
