Ingredients
  

Turkey Mixture

  • 1 pound lean ground turkey
  • 1 tablespoon olive oil
  • 1 medium yellow onion finely chopped
  • 1 packet low-sodium taco seasoning mix 1 ounce
  • 1/2 cup water

Salad Base & Toppings

  • 1 head romaine lettuce chopped into bite-sized pieces
  • 1 cup cherry tomatoes halved
  • 1 can black beans 15-ounce, rinsed and drained
  • 1 cup frozen corn thawed
  • 1/2 cup shredded cheddar cheese
  • 1 medium avocado diced
  • 1/4 cup cilantro leaves chopped
  • 1/4 cup light sour cream for serving
  • 2 tablespoons lime juice from about 1 lime

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat. Add the finely chopped onion and cook for 3-4 minutes, stirring occasionally, until it becomes soft and translucent.
  • Add the ground turkey to the skillet, breaking it up with a spoon. Cook for 6-8 minutes until the turkey is no longer pink and is cooked through.
  • Stir in the taco seasoning mix and 1/2 cup of water. Bring the mixture to a simmer, then reduce the heat to low and cook for 3-4 minutes, until the sauce has thickened and coats the turkey.
  • While the turkey cooks, assemble the salad bases by dividing the chopped romaine lettuce evenly among four large bowls.
  • Top the lettuce with the seasoned turkey, halved cherry tomatoes, rinsed black beans, thawed corn, shredded cheese, diced avocado, and chopped cilantro.
  • Drizzle each salad with a tablespoon of lime juice and add a dollop of sour cream just before serving.

Notes

Add mozzarella or feta for a cheesy twist. Let dough rise in a warm oven (off) for faster proofing.
