Ingredients
  

  • 1 cup natural creamy peanut butter at room temperature
  • 1/3 cup pure maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp fine sea salt
  • 1 1/2 cups old-fashioned rolled oats
  • 1/3 cup mini chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  • In a large mixing bowl, combine the peanut butter, maple syrup, egg, vanilla extract, baking soda, and salt. Stir with a rubber spatula until the mixture is completely smooth and uniform.
  • Add the rolled oats and mini chocolate chips to the bowl. Fold everything together until the oats are fully coated and no dry spots remain. The dough will be thick and sticky.
  • Use a tablespoon or a small cookie scoop to portion the dough. Roll each portion between your palms to form a smooth ball, then place it on the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each ball with your palm or the back of a fork to about a 1/2-inch thickness.
  • Bake for 10 to 12 minutes, or until the edges are just set and the tops look dry. The centers will still be soft. Let the snacks cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely. They will firm up as they cool.
