Ingredients
  

Soup Base

  • 1 pound lean ground turkey
  • 2 tablespoons olive oil
  • 1 medium yellow onion finely chopped
  • 1 medium red bell pepper chopped
  • 3 cloves garlic minced
  • 1 packet taco seasoning 1.25-ounce

Canned Ingredients

  • 1 can black beans 15-ounce, drained and rinsed
  • 1 can pinto beans 15-ounce, drained and rinsed
  • 1 can sweet corn 15-ounce, drained
  • 1 can diced tomatoes with green chiles 10-ounce, undrained

Liquids & Seasonings

  • 4 cups low-sodium chicken broth
  • 1 cup water
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Optional Toppings

  • shredded cheese

  • tortilla strips
  • chopped fresh cilantro
  • sliced jalapeño

Instructions
 

  • Heat 2 tablespoons of olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add 1 pound of ground turkey and cook, breaking it up with a wooden spoon, for 5 to 7 minutes until no pink remains and it is cooked through.
  • Add the finely chopped onion and chopped bell pepper to the pot with the turkey. Cook for 5 minutes, stirring occasionally, until the vegetables begin to soften.
  • Stir in 3 minced garlic cloves and the entire packet of taco seasoning. Cook for 1 minute, stirring constantly, until the garlic is fragrant and the spices are well-coated on the meat and vegetables.
  • Pour in the undrained diced tomatoes with green chiles, drained black beans, drained pinto beans, drained corn, 4 cups of chicken broth, and 1 cup of water. Add 1 teaspoon of kosher salt and 1/2 teaspoon of black pepper.
  • Bring the soup to a boil, then immediately reduce the heat to low and let it simmer uncovered for 15 to 20 minutes, stirring occasionally, to allow the flavors to meld together.
  • Ladle the hot soup into bowls and serve immediately with your favorite toppings like shredded cheese, a dollop of sour cream, tortilla strips, fresh cilantro, or sliced jalapeños.
