Ingredients
  

Filling

  • 1 tablespoon olive oil
  • 1 small yellow onion finely chopped
  • 2 cloves garlic minced
  • 1 pound ground turkey
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 can black beans (15-ounce) drained and rinsed
  • 1 can diced green chiles (4-ounce)

Assembly

  • 8 flour tortillas (6-inch)
  • 2 cups enchilada sauce
  • 2 cups shredded Monterey Jack cheese
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • Preheat your oven to 375°F and lightly grease a 9x13-inch baking dish with cooking spray.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat, then add the chopped onion and cook for 4-5 minutes until softened and translucent before adding the minced garlic and cooking for 1 more minute until fragrant.
  • Add the ground turkey to the skillet, breaking it up with a wooden spoon, and cook for 6-8 minutes until no pink remains, then stir in the cumin, chili powder, oregano, salt, and pepper until the meat is evenly coated with spices.
  • Remove the skillet from heat and fold in the drained black beans and diced green chiles until everything is well combined, creating your filling mixture.
  • Warm the tortillas in the microwave for 30 seconds wrapped in a damp paper towel to make them pliable and easy to roll without cracking.
  • Spoon about 1/3 cup of the turkey filling onto each tortilla, roll them up tightly, and place them seam-side down in the prepared baking dish.
  • Pour the enchilada sauce evenly over the rolled tortillas, making sure they are completely covered, then sprinkle the shredded cheese evenly over the top.
  • Bake uncovered for 20-25 minutes until the cheese is melted and bubbly and the edges of the tortillas are slightly golden brown, then let rest for 5 minutes before sprinkling with fresh cilantro and serving.

Notes

Let the enchiladas rest for 5 minutes before serving to set. Warming the tortillas prevents cracking.
