Ingredients
  

Chicken and Marinade

  • 4 boneless, skinless chicken breasts about 6 ounces each
  • 3 tbsp olive oil divided
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper

Caprese Topping

  • 2 large ripe tomatoes sliced into 1/4-inch thick rounds
  • 8 oz fresh mozzarella cheese sliced into 1/4-inch thick rounds
  • 1/4 cup fresh basil leaves packed
  • 2 tbsp balsamic glaze

Instructions
 

  • Preheat your grill to medium-high heat, approximately 400-450°F. While the grill heats, pat the chicken breasts dry with paper towels and brush them lightly with 1 tablespoon of olive oil. Season both sides evenly with the salt and black pepper.
  • Place the seasoned chicken breasts on the hot grill and cook for 5 to 7 minutes per side, or until the internal temperature reaches 165°F and the chicken has distinct grill marks.
  • Transfer the grilled chicken to a clean platter and immediately top each breast with a slice of tomato and a slice of mozzarella cheese. The residual heat will slightly warm and soften the cheese.
  • Carefully return the topped chicken to the grill, cover, and cook for an additional 2 to 3 minutes, just until the cheese begins to melt and become soft.
  • Remove the chicken from the grill and transfer it to a serving platter. Garnish with fresh basil leaves, drizzle with the remaining 2 tablespoons of olive oil and the balsamic glaze, and serve immediately.

Notes

The residual heat from the chicken will slightly warm and soften the cheese. Serve immediately.
