Ingredients
  

  • 4 slices sandwich bread such as white, sourdough, or brioche
  • 4 slices cheddar cheese or American cheese about 1 ounce each
  • 2 tablespoons unsalted butter softened at room temperature

Instructions
 

  • Evenly spread 1/2 tablespoon of the softened butter onto one side of each of the four slices of bread. This ensures each sandwich will be perfectly buttery and crisp.
  • Preheat a large non-stick skillet or cast-iron pan over medium heat for 2 to 3 minutes, until hot but not smoking. A gentle sizzle when a drop of water is added indicates readiness.
  • Place two of the buttered-side down bread slices into the preheated pan. Immediately top each bread slice with two slices of cheese. Then, place the remaining two buttered-side up bread slices on top of the cheese.
  • Cook the first side for 3 to 4 minutes, or until the bottom is a deep golden brown and crisp, and you can see the cheese starting to soften at the edges. Adjust heat as needed to prevent burning.
  • Carefully use a wide, sturdy spatula to flip each sandwich.
  • Continue cooking the second side for another 3 to 4 minutes, or until the bread is golden brown and crisp, and the cheese is completely melted and gooey. For extra melty cheese, you can gently press down on the sandwiches with your spatula during the last minute of cooking.
  • Remove the grilled cheese sandwiches from the pan. For best results, slice each sandwich in half diagonally and serve immediately while the cheese is still warm and molten.
