- 8 large ripe tomatoes
- 1/4 cup extra virgin olive oil
- 2 tsp dried oregano
- 2 cloves garlic minced
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 1/2 cup crumbled feta cheese
- 2 tbsp chopped fresh parsley
Preheat your oven to 400°F (200°C) to ensure it is fully heated when the tomatoes are ready to roast.
Slice the tomatoes in half horizontally and arrange them cut-side up in a single layer on a large, rimmed baking sheet.
In a small bowl, combine the olive oil, dried oregano, minced garlic, salt, and pepper; drizzle this mixture evenly over the tomato halves.
Roast the tomatoes on the middle oven rack for 45 to 55 minutes, or until the skins have wrinkled and the flesh is soft and caramelized at the edges.
Remove the baking sheet from the oven and let the tomatoes cool for 5 minutes; sprinkle the crumbled feta and fresh parsley over the top just before serving warm.
