Ingredients
  

  • 8 large ripe tomatoes
  • 1/4 cup extra virgin olive oil
  • 2 tsp dried oregano
  • 2 cloves garlic minced
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley

Instructions
 

  • Preheat your oven to 400°F (200°C) to ensure it is fully heated when the tomatoes are ready to roast.
  • Slice the tomatoes in half horizontally and arrange them cut-side up in a single layer on a large, rimmed baking sheet.
  • In a small bowl, combine the olive oil, dried oregano, minced garlic, salt, and pepper; drizzle this mixture evenly over the tomato halves.
  • Roast the tomatoes on the middle oven rack for 45 to 55 minutes, or until the skins have wrinkled and the flesh is soft and caramelized at the edges.
  • Remove the baking sheet from the oven and let the tomatoes cool for 5 minutes; sprinkle the crumbled feta and fresh parsley over the top just before serving warm.
