Ingredients
  

Taco Shells

  • 6 small flour tortillas 6-inch size
  • 1 tbsp unsalted butter melted
  • 1/4 cup granulated sugar
  • 1 tbsp ground cinnamon

Cheesecake Filling

  • 8 oz cream cheese softened at room temperature
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 1/2 cups Fruity Pebbles cereal
  • Additional Fruity Pebbles cereal for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C). Brush the outside of each flour tortilla lightly with the melted butter. In a small bowl, mix together the granulated sugar and cinnamon, then sprinkle the mixture generously over the buttered tortillas to coat them evenly.
  • Drape each coated tortilla over two bars of your oven rack, forming a U-shape to create the taco shell. Bake for 7-10 minutes, or until the tortillas are golden brown and crisp. Carefully remove them from the oven and let them cool completely on a wire rack.
  • While the shells cool, make the filling. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until it is smooth and creamy. Gradually beat in the powdered sugar and vanilla extract until the mixture is fully combined and fluffy.
  • In a separate, clean bowl, whip the heavy cream with an electric mixer on high speed until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture using a spatula until no white streaks remain, creating a light and airy cheesecake mousse.
  • Gently fold 1 1/2 cups of Fruity Pebbles cereal into the cheesecake mousse until they are evenly distributed throughout the filling.
  • Once the taco shells are completely cool, carefully spoon the Fruity Pebbles cheesecake filling into each shell. Garnish the top with additional cereal for a colorful crunch. Serve immediately.

Notes

Let shells cool completely before filling to maintain crispness. Serve immediately after assembly.
