Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup fresh cranberries coarsely chopped
  • 1 tbsp orange zest

Wet Ingredients

  • 3/4 cup orange juice
  • 1/2 cup unsalted butter softened
  • 1 large egg at room temperature
  • 1 tsp vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease the bottom and sides of a 9x5-inch loaf pan.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until they are well combined. Gently stir in the chopped cranberries and orange zest.
  • In a separate medium bowl, use an electric mixer on medium speed to beat the softened butter, orange juice, egg, and vanilla extract until the mixture is smooth and creamy.
  • Pour the wet ingredients into the large bowl with the dry ingredients. Stir with a spatula just until the flour is fully moistened and no dry streaks remain; be careful not to overmix the batter.
  • Spread the batter evenly into the prepared loaf pan. Bake for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  • Let the bread cool in the pan on a wire rack for 10 minutes. Then, carefully turn the loaf out of the pan onto the rack and allow it to cool completely before slicing.
