Dough
- 1.5 cups all-purpose flour
- 2 tsp baking powder
- 0.5 tsp salt
- 2 tbsp olive oil
- 0.5 cup unsweetened almond milk
Filling
- 0.5 cup marinara sauce
- 4 oz vegan mozzarella shreds
- 2 tbsp nutritional yeast
- 1 tsp dried oregano
- 0.5 tsp garlic powder
- 1 tbsp olive oil for brushing
Preheat your oven to 375°F and line a baking sheet with parchment paper. In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until fully combined.
Pour in the 2 tablespoons of olive oil and the unsweetened almond milk. Stir with a wooden spoon until a shaggy dough forms, then use your hands to knead it in the bowl for about 1 minute until it becomes a smooth, cohesive ball.
On a lightly floured surface, roll the dough out into a 10x12 inch rectangle using a rolling pin. Spread the marinara sauce evenly over the dough, leaving a ½-inch border around all edges.
Sprinkle the vegan mozzarella shreds, nutritional yeast, dried oregano, and garlic powder evenly over the sauce. Starting from one of the longer sides, tightly roll the dough into a log, pinching the seam closed at the end.
Use a sharp knife to slice the log into 8 equal pieces. Place the rolls cut-side up on the prepared baking sheet, brush the tops with 1 tablespoon of olive oil, and bake for 20-25 minutes until the tops are golden brown and the dough is fully cooked through.
