Ingredients
  

Baked Brie

  • 1 8-ounce wheel brie cheese at room temperature
  • 1/4 cup whole-berry cranberry sauce
  • 2 tablespoons chopped toasted pecans

Honeyed Goat Cheese

  • 1 8-ounce log goat cheese
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves

Meats and Cheeses

  • 8 ounces sliced hard salami
  • 6 ounces sliced prosciutto
  • 4 ounces pepperoni
  • 6 ounces aged cheddar cheese cut into 1/2-inch cubes
  • 6 ounces gouda cheese cut into small wedges

Accompaniments

  • 1/2 cup Marcona almonds
  • 1/2 cup dried apricots
  • 1/4 cup cornichons
  • 1 bunch red seedless grapes
  • 1 baguette baguette sliced into 1/2-inch thick pieces and toasted

Instructions
 

  • Place the wheel of brie on a small, oven-safe dish or cast-iron skillet. Top the brie with the cranberry sauce and chopped pecans. Bake at 350°F for 12-15 minutes, or until the cheese is soft and bubbly around the edges.
  • Place the log of goat cheese on a small serving plate. Drizzle it with the honey and sprinkle with the fresh thyme leaves.
  • Arrange the larger items on a large wooden board or platter first. Place the baked brie dish and the plate with the honeyed goat cheese on opposite sides of the board to anchor the arrangement.
  • Fold the slices of salami and prosciutto into quarters or roll them into loose cones to create height and texture. Arrange these meats in small piles near the cheeses, grouping each type together.
  • Fill in the empty spaces on the board with the remaining items. Create small piles of the cheddar cubes, gouda wedges, pepperoni, Marcona almonds, and dried apricots. Place the cornichons in a small bowl or pile them directly onto the board.
  • Tuck the bunch of grapes and the toasted baguette slices around the board to fill any final gaps. The board should look abundant and inviting, with a variety of colors and textures.

Notes

Let the brie come to room temperature for easier baking. Fold or roll the meats for texture and height.
