Ingredients
  

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg at room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp kosher salt

Instructions
 

  • Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  • In a medium mixing bowl, combine the peanut butter, sugar, egg, vanilla extract, baking soda, and salt. Use a wooden spoon or spatula to stir until a thick, cohesive dough forms with no streaks of dry ingredients remaining.
  • Scoop the dough by the tablespoonful and roll it between your palms to form 1-inch balls. Place the balls on the prepared baking sheets, spacing them about 2 inches apart.
  • Use the tines of a fork to press down on each dough ball to flatten it slightly, then press again in the opposite direction to create a classic criss-cross pattern.
  • Bake for 10 to 12 minutes, or until the edges of the cookies are set and lightly golden. The centers will still look soft.
  • Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes to firm up. Then, transfer them to a wire rack to cool completely.
