Ingredients
  

  • 1 pound ground pork sausage
  • 1 block cream cheese 8-ounce, softened
  • 1 can diced tomatoes with green chilies 10-fluid ounce, undrained
  • 2 cups shredded Monterey Jack cheese

Instructions
 

  • In a large skillet over medium-high heat, cook 1 pound of ground pork sausage, breaking it up with a spoon, until it is fully browned and no pink remains, about 5 to 7 minutes. Drain any excess grease from the skillet and return the sausage to the pan.
  • Reduce the heat to medium-low. Add the 1 (8-ounce) block of softened cream cheese and 1 (10-fluid ounce) can of undrained diced tomatoes with green chilies to the skillet with the cooked sausage. Stir continuously, breaking up the cream cheese, until it has melted and is well combined with the sausage and tomatoes, creating a creamy base, about 3 to 5 minutes.
  • Gradually stir in 2 cups of shredded Monterey Jack cheese, a handful at a time, allowing each addition to melt before adding more. Continue stirring until all the cheese is fully melted and the dip is smooth and bubbling gently, approximately 3 to 4 minutes.
  • Remove the skillet from the heat. Serve the warm, bubbly dip directly from the skillet or transfer it to a serving bowl.

Notes

This dip is best enjoyed warm with tortilla chips, pita bread, or sliced vegetables for dipping.
