Ingredients
  

Base

  • 1 sleeve saltine crackers about 40 crackers
  • 1 cup unsalted butter
  • 1 cup packed light brown sugar
  • 1/4 tsp salt
  • 2 tsp vanilla extract

Topping

  • 1/4 cup granulated sugar
  • 1 tbsp ground cinnamon
  • 1 cup semi-sweet chocolate chips
  • 3 tbsp heavy cream

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a 10x15-inch rimmed baking sheet with aluminum foil and arrange the saltine crackers in a single, even layer.
  • In a medium saucepan over medium heat, combine the unsalted butter and brown sugar. Bring the mixture to a boil, stirring constantly, then cook for exactly 3 minutes until the toffee is smooth and thickened.
  • Carefully pour the hot toffee mixture evenly over the saltine crackers. Use an offset spatula to gently spread it into a thin, even layer, covering all the crackers. Bake for 5 minutes until the toffee is bubbly and the crackers have softened slightly.
  • While the toffee bakes, whisk together the granulated sugar and ground cinnamon in a small bowl and set aside.
  • Remove the baking sheet from the oven and immediately sprinkle the chocolate chips evenly over the hot toffee. Let them sit for 2-3 minutes to soften, then use a spatula to spread the melted chocolate into a smooth, even layer.
  • Before the chocolate sets, sprinkle the cinnamon-sugar mixture evenly and generously over the entire surface. Allow the toffee to cool at room temperature for 1 hour, then transfer the pan to the refrigerator for another hour to allow the chocolate to set completely.
  • Once the chocolate is firm, lift the foil to remove the entire slab of toffee from the pan. Break it into 2-inch irregular pieces with your hands. Serve immediately or store in an airtight container.
