Cake Batter

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter softened
  • 2 large eggs at room temperature
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp salt

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan with butter or non-stick cooking spray and set it aside.
  • In a large mixing bowl, use an electric hand mixer to cream together the softened butter and granulated sugar for 3-4 minutes, until the mixture is pale, light, and fluffy.
  • Beat the room-temperature eggs into the butter mixture one at a time, ensuring each is fully incorporated before adding the next, then mix in the vanilla extract.
  • In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt. Add half of these dry ingredients to the wet mixture and stir with a spatula until just combined. Pour in the milk and stir again, then add the remaining dry ingredients and mix just until no streaks of flour remain, being careful not to overmix.
  • Pour the batter into the prepared baking pan and use a spatula to spread it into an even layer. Bake for 30-35 minutes, until the edges are golden brown and a toothpick inserted into the center comes out clean.
  • Let the cake cool completely in the pan on a wire rack for at least 1 hour. Before serving, sift a light dusting of powdered sugar over the top. Slice into squares.
