Ingredients
  

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt divided
  • 1/2 teaspoon black pepper divided
  • 8 ounces cremini mushrooms sliced
  • 1 package frozen chopped spinach 10 ounce, thawed and squeezed dry
  • 1 cup shredded mozzarella cheese divided
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup sour cream at room temperature
  • 1/3 cup mayonnaise
  • 2 cloves garlic minced

Instructions
 

  • Preheat your oven to 375°F. Lightly grease an 8x8-inch or similar 2-quart baking dish with nonstick cooking spray or a little olive oil.
  • Season the chicken breasts on both sides with 1/2 teaspoon of the salt and 1/4 teaspoon of the black pepper. In a large skillet over medium-high heat, heat the olive oil. Add the chicken and cook for 5-6 minutes per side, until golden brown and cooked through. Transfer the chicken to a cutting board and let it rest for 5 minutes, then use two forks to shred it into bite-sized pieces.
  • In the same skillet, add the sliced mushrooms. Cook over medium heat for 6-8 minutes, stirring occasionally, until the mushrooms have released their liquid and are browned. Stir in the minced garlic and cook for 1 more minute, just until fragrant. Remove the skillet from the heat.
  • In a large mixing bowl, combine the shredded chicken, cooked mushrooms and garlic, squeezed-dry spinach, 1/2 cup of the mozzarella cheese, all of the Parmesan cheese, sour cream, mayonnaise, the remaining 1/2 teaspoon salt, and the remaining 1/4 teaspoon black pepper. Stir gently but thoroughly until the mixture is uniformly combined and creamy.
  • Transfer the chicken and spinach mixture to your prepared baking dish, spreading it into an even layer. Sprinkle the remaining 1/2 cup of mozzarella cheese evenly over the top.
  • Bake, uncovered, in the preheated oven for 20-25 minutes, until the cheese on top is melted, bubbly, and lightly browned in spots. Let the bake rest for 5-10 minutes before serving to allow it to set slightly for easier scooping.
