Ingredients
  

  • 6 large eggs at room temperature
  • 1/4 cup whole milk
  • 1 cup sharp cheddar cheese shredded
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon unsalted butter melted

  • Preheat your oven to 350°F. Thoroughly grease a standard 12-cup muffin tin with the 1 tablespoon of melted unsalted butter, ensuring all cups are coated to prevent sticking.
  • In a large mixing bowl, whisk together the 6 large eggs, 1/4 cup whole milk, 1/2 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper until the mixture is uniformly yellow and slightly frothy on top.
  • In a separate small bowl, combine the 2 tablespoons all-purpose flour and 1/2 teaspoon baking powder. Whisk these dry ingredients together well to ensure the baking powder is evenly distributed and there are no lumps.
  • Gradually add the dry flour mixture to the wet egg mixture, whisking constantly until just combined. Mix only until the flour streaks disappear; avoid overmixing, as a few small lumps are perfectly acceptable.
  • Gently fold in the 1 cup of shredded sharp cheddar cheese using a rubber spatula. Mix until the cheese is evenly distributed throughout the batter.
  • Carefully spoon the batter into each cup of the prepared muffin tin, filling each cup about two-thirds full. This will allow room for the bites to puff up during baking.
  • Bake for 18 to 22 minutes, or until the tops of the bites are puffed, golden brown, and a wooden skewer or toothpick inserted into the center of one comes out clean.
  • Let the cheddar breakfast bites cool in the muffin tin for 5 minutes before carefully removing them. Serve warm for the best texture and flavor.
