Ingredients
  

For the Pork Chops

  • 4 bone-in pork chops about 1-inch thick
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper freshly ground
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika

For the Sauce and Aromatics

  • 1 medium yellow onion thinly sliced
  • 2 cloves garlic minced
  • 1/2 cup chicken broth
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 2 tablespoons fresh parsley chopped for garnish

Instructions
 

  • Pat the pork chops dry with paper towels, then rub them evenly on both sides with the olive oil. In a small bowl, combine the salt, black pepper, garlic powder, onion powder, and smoked paprika. Season both sides of the pork chops generously with this spice mixture.
  • Heat a large skillet over medium-high heat. Sear the pork chops for 2-3 minutes per side, until a golden-brown crust forms. You do not need to cook them through; this step is just for color and flavor. Transfer the seared chops to the slow cooker.
  • Add the thinly sliced onion and minced garlic to the same skillet. Cook for 3-4 minutes, stirring, until the onions have softened and become fragrant. Scrape the onion and garlic mixture over the pork chops in the slow cooker.
  • In a small bowl or liquid measuring cup, whisk together the chicken broth, brown sugar, apple cider vinegar, and Worcestershire sauce. Pour this mixture over the pork chops and onions in the slow cooker.
  • Cover and cook on Low for 6-7 hours or on High for 3-4 hours, until the pork chops are tender and easily pull apart with a fork.
  • Carefully transfer the cooked pork chops to a serving platter and tent loosely with foil to keep warm. Pour the remaining liquid and onions from the slow cooker into a small saucepan and bring to a simmer over medium heat.
  • In a small bowl, create a slurry by stirring the cornstarch and cold water together until smooth. While whisking constantly, slowly pour the slurry into the simmering sauce. Continue to cook for 1-2 minutes, whisking, until the sauce has thickened to a gravy-like consistency.
  • Spoon the thickened sauce and onions over the pork chops on the platter. Garnish with fresh chopped parsley before serving.
